If you’re like me, you’ve been fighting this bug that’s floating around. It’s finally getting the best of me. So I put together a pot of homemade chicken soup. It’s super easy and better than anything you’ll buy in a can. You more than likely have all the ingredients at home.
Ingredients:
1 Rotisserie Chicken (Pull the meat off the bone and plop it in the soup. No skin.)
2/3 cup of pasta (noodles, orzo, jasmine or basmati rice
2 large garlic cloves minced
1/3 of a medium white onion
2 stalks of celery sliced
2 carrots peeled and sliced in circles
1 32 oz container of chicken broth
2 to 3 cups of water
Seasonings;
Mrs. Dash No-salt seasoning
Lawry’s seasoning salt
Garlic powder
Turmeric
Worcestershire sauce (3-4 tablespoons)
Rosemary
Parsely
Directions:
Pour olive oil in a deep pot and sautee the garlic, onion, celery, and carrots until tender. Add chicken broth, water, chicken, seasonings. Cook on medium heat for ten minutes and add the pasta. I let everything cook down and meld for thirty minutes, tasting and seasoning along the way.
I sprinkled a little parsley on top. Look at that hot broth. It’s so soothing for a sore throat.
It’s full of chicken and veggies. There’s nothing like homemade soup. Enjoy!
