I love potatoes and eat them in some form at least once a day. I call these hash browns because I usually have them for breakfast. But as you’ll see, they’re good with any meal.
Ingredients
1 to 2 diced potatoes (any type you have in the house)
1/4 of an onion
Red, green, yellow and/ or orange bell pepper
2 garlic cloves
Black pepper
Lawry’s Seasoning Salt
Basil, rosemary, or any dried herb you prefer
Mrs. Dash Seasoning
Red pepper flakes
Olive oil
Directions
Heat two tablespoons of olive oil in a non-stick frying pan. Add the diced potatoes, and season with salt, pepper, and Mrs. Dash. Fry the potatoes until they’re nearly done, and then add the onion, garlic, and bell peppers. Continue to fry the potatoes while adding the red pepper flakes, dried herbs, and additional salt and pepper. The veggies should be soft and the potatoes crisp when everything is done.
You can take the dish over the top by adding shredded cheddar cheese. Of course, I add Frank’s red hot sauce.
