I saw these great looking sausage links and pre-cut vegetables at the store and thought they’d make a quick meal. Here’s what I put together.
Ingredients:
Chicken sausage links
Package of mixed vegetables: onion, red bell pepper, and broccoli
Green bell pepper
Minced garlic to taste
Asparagus
1 can of cannellini beans
Seasonings:
1 tablespoon of lemon juice
Dash of Worcestershire sauce
Fresh ground black pepper
Garlic Salt
Parsely or cilantro (optional)
Olive Oil
Directions:
Brown the chicken sausage links in olive oil. I bought these from Fresh Thyme and they were already perfectly seasoned. Remove them from the pan and add the vegetables. I also added green bell pepper and asparagus. You can toss in whatever you have in the refrigerator. I season the veggies up and stir-fry.
While that’s cooking, I heated up a can of cannellini beans. I added a red pepper flake and garlic seasoning mix, Not Ya Mama seasoning, fresh ground pepper, and parsley. If you want, you could spread the beans down on a plate and put the stir-fry on top. I have a thing about certain foods touching, so I eat the beans separate in a bowl.
Not a fancy meal, but delicious and healthy. Most importantly, It took less than twenty minutes to whip up.
