I have another one-pot meal for you. It’s healthy, tasty, and easy.
Ingredients:
Turkey tenderloin-
1 packet of French Onion soup
1 packet of brown gravy
Pepperoncini (Add to your taste.)
Fresh sliced mushrooms
Fresh sliced carrots
1 small onion
3 cloves of garlic
1 sliced celery stalk
4 small new /red potatoes quartered
Basmati brown rice
1 to 2 cups of water
2 bay leaves
Sea salt
Fresh ground pepper
Cilantro or parsley
Put the vegetables in the bottom of the slow cooker except for the brown rice. It’s cooked separately. Here’s a helpful hint.
The carrots and celery were previously cut up and frozen. Whenever I see a sale on veggies, I buy extra and freeze them so I can quickly toss them in a dish without having to take time to cut them.
Place the tenderloin on top of the vegetables, add the seasonings and water. Turn the slow cooker on low for 6 to 7 hours. When it’s done, take the tenderloin out and shred it using two forks. Put the meat back in the slow cooker.
Scoop the tenderloin and vegetables over the brown rice and ladle on plenty of gravy. You can add cilantro or parsley on top for extra flavor. Enjoy!
