This is a delicious recipe that has a unique taste. Lemongrass and a touch of curry. You won’t believe how delicious it is.
1 to 2 chicken breasts cut in bite size pieces
1 to 3 small stalks of lemongrass (Make sure you remove the hard layers and then slice the stems in circles.)
1 medium onion
4 cloves of garlic
Half a red bell pepper
Half a green bell pepper
Minced ginger to taste
2 to 3 tablespoon of fish sauce
1 teaspoon of coconut sugar (or sweetener of your choice)
Sea salt and fresh ground pepper
Red chili pepper flakes
Mrs. Dash Salt-Free Seasoning
Curry infused olive oil (Or you can mix curry powder with olive oil)
Rice of your choice
Heat curry infused olive oil in the bottom of a non-stick pan. Add chicken to the pan and season with salt, pepper, and garlic powder. After five minutes, add vegetables and season with Mrs. Dash, red chili pepper flakes, ginger, garlic, and lemongrass. While that’s cooking, mix fish sauce, curry olive oil, and coconut sugar in a bowl and add it to the chicken, veggies, and seasonings. Cook on medium-high for about ten minutes, making sure the lemongrass softens. Serve over a bowl of rice.
Toss some cilantro and sesame seeds on top of the dish and dig in.
