Like everyone else, I’m so busy it’s hard to cook a meal. Since I try to stay on a Mediterranean based, gluten-free diet, cooking can be time-consuming. I’ve been forced to come up with quick recipes like this one: butter beans and spinach soup.
Ingredients (serves one)
1 can of drained butter beans
Handful of spinach
chopped green onion
1/3 to 1/2 cup of vegetable broth
Fresh ground black pepper
Mrs. Dash seasoning
Pour the drained butter beans in a small pot, add broth, green onions, and seasonings. Cook until the broth starts to boil, add spinach and cook until the spinach wilts. Spoon into a bowl and enjoy your dinner.
