Chicken stew is a hearty meal that’s full of meat, potatoes, and vegetables. I came up with a version of chicken stew that’s guaranteed to be delicious and easy on the wallet. The first thing you’ll need is a slow cooker.
Ingredients
1 pound of chicken breasts or thighs (You can reduce it to half a pound and add more veggies.)
1 medium onion
1 celery stalk
1 medium carrot
2 medium potatoes
4 garlic cloves-roughly chopped
30-32 ounces of chicken broth
Fresh mushrooms
Seasonings
1 bay leaf, ground black pepper, turmeric (optional), chicken seasoning, garlic powder, Worchestshire sauce, basil, parsley, and thyme
Instructions
Place chicken breasts in the bottom of the Crockpot. Add chicken seasoning and black pepper.
Place the vegetables in and the seasonings. Pour in the chicken broth and give it all a good stir. Set the slow cooker on high and let it do the work.
Once the stew was done, I took the chicken breasts out and shredded them. You can break the chicken into chunks, but I wanted a lot of texture in the dish. Place the shredded chicken back in and enjoy the result.
You can serve the stew over a bed of rice or egg noodles. I like it just like this. It tastes amazing and fills you up. Let me know if you give this a try.
