Quick Shrimp Fried Rice

You just got home, and you want something quick and healthy for dinner. Try this recipe. You’ll love it.

Ingredients:

1 small bag of mixed vegetables. (Carrots, green beans, corn or whatever you like.)

I bag of large shrimp (skinned and deveined)

Half of a small yellow or red onion chopped

2 cloves of garlic chopped

Chilled brown rice (as much or as little as you want)

1 egg

Olive oil

Sea Salt & Pepper

Garlic powder

Mrs. Dash No-Salt Seasoning

Low Sodium soy sauce

Cilantro or green onions for garnish

Any other herbs or seasonings you’d like to add

Directions:

Add olive oil to skillet pan and scramble egg until nearly done. Add onions, garlic, and the bag of frozen mixed vegetables. I season as I add each layer. Push the veggies to the side and add shrimp to the pan. Once the shrimp starts to turn pink, add the chilled brown rice and blend everything together. You can add soy sauce now or later.

  1. I love egg fried rice, but never tried cooking it. Think I will follow your recipe, not a fan of shrimps and will substitute for fish or chicken 👍😋😁
