I used to make this dish all the time except I used canned beans and Italian salad dressing. I came up with this version which is fresher, healthier and really tasty. It can be eaten hot or cold.
3-4 thin chicken breast cutlets
1 pound of fresh green beans (ends removed)
1 small package of white button top mushrooms (sliced)
1 small onion (coarsely chopped)
3-4 cloves of garlic (chopped)
10-12 cherry tomatoes cut in half
Fish sauce (This is very salty so taste as you add.)
Reduced sodium soy sauce
Fresh ground pepper
Weber’s Roasted Garlic seasoning for chicken
Mrs. Dash Seasoning
Rosemary or any herbs that you like.
Heat olive oil in a non-stick pan and cook the chicken cutlets. Season each side with Weber’s chicken seasoning. Remove the cooked chicken from the pan and let it rest.
Pour more olive oil to the pan and add the onion, green beans, garlic, and mushrooms. Season with Mrs. Dash and pepper. Stir-fry for a few minutes. Meanwhile, cut the cooked chicken into bite size pieces. Add the chicken and sliced cherry tomatoes to the pan. Season with the fish sauce and soy sauce.
Serve up a plate and enjoy!
