I try to order one vegetarian meal out of the three Blue Apron recipes I order every week. I was shocked when I placed a fork of this Broccoli and Ricotta Cannelloni recipe in my mouth. It was amazing. No meat needed.
Ingredients:

6 Fresh Pasta Sheets
- 1 15-Ounce Can Crushed Tomatoes (I also added Classico marinara sauce.)
- 1 clove Garlic
- ½ lb Broccoli
- ½ cup Part-Skim Ricotta Cheese
- 1 oz Pitted Niçoise Olives

1½ tsps Calabrian Chile Paste
- ¼ cup Grated Parmesan Cheese

½ oz Sweet Piquante Peppers
Directions:
Preheat to 450°F. Put a pot of water on the stove to boil. Spread the roughly chopped broccoli on a foil covered sheet pan, add olive oil, salt, and pepper. Mix everything up and roast for 10 minutes.
While the broccoli roasts, roughly chop the garlic, olives, and peppers. The recipe says to make the garlic into a paste, but I didn’t have time for all of that.
Separate the sheets of pasta and drop them into the pot of boiling water. Cook about 3 minutes, drain and rinse under cold water to stop the cooking process.
In a large bowl, combine the chopped olives, peppers, roasted broccoli, garlic, ricotta, and olive oil. I also added Mrs. Dash seasoning and chili pepper flakes.
To make the sauce, in a bowl combine the tomatoes and the chile paste. I added half a jar of the Classico marinara sauce. I mixed in Worcestershire sauce, sugar, oregano, basil, and rosemary. In other words, feel free to add the seasonings you like.
Spread about 1/2 a cup of the tomato sauce into the bottom of a baking dish. Evenly divide the filling among the centers of the cooked pasta sheets and roll. Place the pasta rolls into the baking dish, seam side down. Pour the sauce on top. I grated a mixture of romano, parmesan, and Asiago cheese that I bought from Trader Joe’s. Bake the cannelloni 10 to 12 minutes. I added green onion and cilantro on top.
