Korean Beef and Spicy Mayo Stir-Fry

Another quick and easy meal from Blue Apron. It took me about twenty minutes to whip up this meal up.

  • 10 oz Thinly Sliced Beef
  • ½ cup Jasmine or Brown Rice (prepare according to directions)
  • 3 oz Radishes
  • 4 cloves Garlic
  • 4 oz Snow Peas (cut off the ends)
  • 1 Tbsp Light Brown Sugar
  • 1 Tbsp Soy Sauce
  • ¼ cup Cornstarch
  • 2 Tbsps Mayonnaise
  • 1 Tbsp Sesame Oil or Olive Oil
  • 1 Tbsp Rice Vinegar
  • 2 tsps Gochujang

**I also added onion, green pepper, and fish sauce.

Directions:

Rinse and pat dry the beef pieces. Pour cornstarch in a bowl and add salt, pepper and any other seasonings you like. Coat all the pieces in the cornstarch. Heat up oil in a pan, and make sure it’s really hot. Put the pieces flat on the pan and let them cook about two minutes on each side.

Remove the meat and add the sliced vegetables and stir fry. Meantime, put the fish sauce, brown sugar, soy sauce, and any other seasonings you like in a bowl and mix. Add the meat back to the vegetables, pour on the sauce on the beef and vegetables and stir-fry for about two minutes.
