Creamy Lemon Shrimp and Orzo

I have another delicious Blue Apron meal for you. Blue Apron is a weekly meal delivery service. I order three meals a week that provide two servings each.

This recipe is from their Freestyle Weight Watchers menu. It has a 12 Smartpoint value or 470 calories per serving.

Ingredients

10 oz tail-on Shrimp (Remove tails)

1 Zucchini (Cut in half then lengthwise)

1 1/2 tsps Calabrian Chile Paste

2 Tbsps Creme Fraiche (French sour cream)

1/4 Cup of Grated Parmesan cheese

4 oz Orzo pasta

2 to 4 Garlic Cloves (roughly chopped)

1 Lemon (quartered and seeds removed)

1 Tbsp of Capers

Olive Oil

Fresh Ground Pepper

I added these additional ingredients to Blue Apron’s recipe:

1/4 of Onion (sliced)

Rosemary

Red pepper flakes

Chipotle Salt

Directions

Fill a pot with cool water and heat. Put shrimp in a bowl and add garlic, capers, chile paste, a little olive oil, salt, and fresh ground pepper. Mix together and let the flavors meld.

Add the pasta to the pot of boiling water and cook, uncovered for about 8 minutes or until the orzo is tender. Drain the water off the cooked orzo.

In a pan, heat olive oil and the sliced zucchini and onion in an even layer and cook,  until lightly browned.

Move the zucchini to one side of the pan and add the shrimp. Cook until the shrimp is opaque.

Mix in the crème fraîche, and the juice of 2 lemon wedges, rosemary, red pepper flakes, salt, and pepper.
