This is a quick jerk chicken recipe that’s low-calorie and amazing. You probably have all the ingredients in your kitchen cabinet.
The first step and most important step is to marinade the chicken. First I removed the skin from the chicken legs. No one needs all that fat.
Then I put the chicken in a plastic storage bag. I used fresh thyme and a dry jerk seasoning mix I picked up somewhere. The secret ingredient is liquid smoke. Below is a list of all the ingredients. I don’t measure. Just add as much as I think I’ll like.
Marinade: fresh thyme, jerk chicken seasoning, garlic powder, garlic cloves, onion powder, Worcestershire sauce, black pepper, seasoning salt, Allspice balls, and liquid smoke.
I let the chicken legs marinate overnight or throughout the day and then pour the meat and the mixture in a baking dish. Cook on 400 degrees until the meat is brown, flip on the other side and cook until they’re done.
The meat is perfectly seasoned and tastes as if it has been smoked. Absolutely delicious!
