Kale, Sweet Potatoes, and Cranberries Stir-Fry

This is a healthy, quick dish that you can whip up as lunch, dinner or as a side. I used kale, sweet potatoes, and cranberries. You can also add or substitute with chick peas or sliced almonds.

Ingredients:

1 to 2 large sweet potatoes cubed

1 small onion

A handful of  dried cranberries

Chinese five spice seasoning or cinnamon

Balsamic vinegar (a splash or two)

1 tablespoon of butter (optional)

Sea salt and fresh ground pepper

Directions:

Put sweet potatoes in a large non-stick pan with enough water to steam them until slightly tender. Next, add olive oil and onion. Stir-fry until onions are tender and add the kale with the seasonings and butter.

Once the kale is cooked down, add the cranberries and give everything a good stir.  You’ll love this recipe!!
