Seafood Medley Soup

I had a package of seafood medley (squid, shrimp, clam, and octopus) sitting in my freezer for several weeks, so I decided to make a seafood soup. It took less than a half hour and it was absolutely delicious.

Ingredients:
1 lb of Seafood Medley and/or add fresh shrimp, fish, mussels, clams, squid, etc.

3 cloves of chopped garlic
1 medium chopped onion
2 stalks of sliced celery
2 tbsp of tomato paste
1 can of diced tomatoes
2 Not Chick’n bouillon cubes
2 cups of water
lemon juice to taste
1 bay leaf

Oregano, thyme, basil, salt, Old Bay seasoning, garlic powder, seasoning salt, Worcestershire sauce, red pepper flakes, and fresh ground pepper to taste.

Directions:

Heat olive oil in a soup pan and add onion, garlic, and celery. Once the veggies soften add the tomato paste, diced tomatoes, a bay leaf, bouillon cubes, water, and seasonings. Let the soup for simmer for 30 minutes, and then add the seafood and cook for 8 to 10 minutes.

I served the soup over a bed of rice. It was so good that I added rice to the soup in the pot. The next time I make this I’ll use a seafood medley with fresh fish and large shrimp. You can also add sweet corn and/or potatoes. Enjoy!
