A Lazy Cook’s Italian Stew

It’s Sunday and you’ve got a busy day scheduled. Okay, you’re planning to watch Lifetime movies which means you’ll be glued to the TV for hours. Here’s an easy slow cooker meal you can put together during a commercial break.

Ingredients:

1 pound of chicken breast cut into chunks

Asparagus

1 medium Onion

3 to 4 cloves of garlic

4 to 6 Campari tomatoes or can diced tomatoes

Yellow, green,  or red bell peppers diced

New potatoes (cut in half)

Optional: Artichokes and/or black olives

1 Package of dry Italian dressing seasoning mix

Fresh ground pepper

4 to 5 cups of low sodium chicken broth

Any other seasonings that you want to add and your favorite Italian salad dressing.

Directions:

Put all the ingredients in a slow cooker, and let it cook for 3.5 to 4 hours on high. When it’s done take your bottle of Italian dressing and add it o the stew. I do three long squeezes. Now you’ve got a real Italian stew. Enjoy!
