Here’s a delicious pasta salad that’s great for get-togethers, potlucks, or family dinners.
1 to 1 1/2 packets of refrigerated cheese tortellini
1 small jar of artichoke hearts
1 can of pitted black olives
1 small red onion
1 container of Mediterranean feta cheese
1 large stick of dried pepperoni cut into chunks or any type of meat you want salami, ham, prosciutto, or a combination.
1/3 of a large yellow bell pepper cubed
1/3 of a large orange bell pepper cubed
1/3 of a large red bell pepper cubed
A handful of cherry tomatoes sliced in half
1/3 of a cucumber cubed
Sea salt ( only add if needed)
Ground black pepper
Oregano, basil, parsley
Salad dressing ingredients:
Hidden Valley Ranch Salad dressing
1/3 cup of olive oil
Red Wine vinegar
2 teaspoons of minced garlic
***I put about a third of the packet of Hidden Valley Ranch seasoning in a bowl, add the minced garlic, the olive oil, and vinegar. Blend together well.
Put the bell peppers, red onion, artichoke hearts, black olives, cucumbers, and cherry tomatoes in a mixing bowl. Season the veggies with garlic powder, pepper, oregano, basil, and parsley.
Add the pepperoni and the feta cheese and blend well.
I fold the cheese tortellini pasta into the mixture and pour the Hidden Valley dressing on the pasta salad and mix. It’s absolutely delicious!
