Who doesn’t like sausage and potatoes? This is one of my favorite meals. I give the dish a healthier twist by using turkey sausage instead of pork or beef kielbasa.
1 medium onion
4 to 5 garlic cloves
Yellow, orange, and green peppers
Seasonings: garlic powder, sea salt, Mrs. Dash, ground black pepper, Lawry’s seasoning salt, parsley, oregano.
Optional: cilantro, Colby Jack cheese
In a non-stick pan, add 1 cup of water and boil potatoes for 8 minutes. Drain any remaining water, add olive oil and sliced sausage to the pan. Once the sausage and potatoes are nearly browned, add onion, garlic, and peppers. Season to your taste. Toss cilantro and cheese on top and enjoy.
