This meal is hearty, healthy, and hella good. Simply toss everything in a slow cooker and let it go. Of course, it’s gluten-free and a great Mediterranean Diet dish.
Ingredients:
- A pound of beef stew meat
- 1 yellow onion, diced
- 3 garlic cloves
- 2 carrots, diced
- 2 celery sticks, chopped
- 3 russet potatoes, peeled and cubed
- Sliced mushrooms
- Ground black pepper
- Celtic sea salt
- Lawry’s seasoning salt
- Thyme
- Parsley
- 1 bay leaf
- 1/2 tsp cinnamon
- 1/2 tsp cumin
- 2 to 3 cups of beef broth
- 1 cup of apple juice
- 2 tbsps of apple cider vinegar
- ¼ cup of gluten-free flour
Directions:
Put the vegetables, seasonings, and beef in a crockpot. Cook on high for 4 hours or cook on low for 6 to 8 hours.
About 15 minutes before it’s done, take a cup of liquid and pour it into a bowl. Add about 1/4 cup of flour, adding a teaspoon at a time and stirring as you go. Pour the mixture into the beef stew and combine. This will thicken the stew.
