This is a delicious meatloaf that is gluten-free. You use oatmeal instead of breadcrumbs. It sounds weird but it’s very tasty.
Ingredients:
1 pound of ground turkey
Diced onion, green and red bell pepper, and garlic (You can cook these before adding to meatloaf mixture. I don’t because I like crunchy vegetables in my meatloaf.)
1 egg
3 cup of rolled oats (gluten-free)
Fresh ground black pepper
Parsley
Basil
Oregano
Mrs. Dash no-salt seasoning
Celtic sea salt
1/4 cup of ketchup
3/4 cup of Sweet Baby Ray’s barbecue sauce (I used honey chipotle flavor.)
Directions:
Put all the ingredients in a mixing bowl. Combine the ketchup and barbecue sauce together and pour a fourth of the mixture into the mixing bowl. Mix all the ingredients together well with your hands.
Rub extra virgin olive oil in a glass dish or a baking pan, and form a loaf out of the meat mixture and pour most of the barbecue and ketchup mixture on top, reserving a little on the side. Cook at 350 for 45 to 50 minutes until the temperature reaches an internal temperature of 170 degrees. Remove from the meatloaf from the oven and pour the reserved barbecue and ketchup sauce on top and enjoy.
