Meatless Monday-Sweet Potato & Kale Stir-Fry

Sweet potatoes are chock-full of nutrients and tasty. They’re great in stews, pies or simply baked. I like to use them in a stir-fry. Here’s a super easy recipe.


4 to 5 small sweet potatoes or 2 big ones

Kale, shredded carrots, and sliced red onion. (Add the amount you want.)

Turmeric, sea salt, ground black pepper, and butter (optional).


Cut the sweet potatoes into small chunks and slice the red onion. Drizzle olive oil into the bottom of a stir-fry pan. Add the sweet potatoes and cook them until they’re tender. Toss in the kale, red onion, and shredded carrots. Add seasonings, a pat of butter and serve.
