This is a quick way to make a hearty dish in minutes. I make this meal on weekdays after a long day at work. White chili can be made with ground chicken or ground turkey. This time I used ground chicken. The key is to prepare most of the meal ahead of time, preferably on the weekend.
I cooked the ground chicken with onions, mushrooms, and garlic. You can additional veggies such as green peppers if you like. Store it in the fridge until you’re ready to use.
Ingredients:
Pre-cooked ground chicken or turkey with onions, mushrooms, and garlic.
1 packet of white chili mix (or a teaspoon of cumin, garlic powder, and a dash of chili powder)
1 can of cannellini beans
1 can of Great Northern beans
1 1/4 cups of chicken broth
Mexican cheese mix or pepper jack cheese
cilantro or parsley (optional)
spices: oregano, salt, pepper, and garlic powder
Directions:
In a large pot, add the cooked ground chicken and all the ingredients listed above. Heat and simmer for about twenty minutes and serve.
I like to serve the white chili with tortilla chips, salsa, jalapenos, and cheese on top. You could also put the chili over a bed of rice. Hope you enjoy.
