Meatless Monday- Mango, Yellow Corn & Black Bean Salsa

Here’s a great Meatless Monday recipe that’s quick, healthy and darn good.

Ingredients

1 Mango-cubed

1/2 Diced red onion

1 Diced tomato

Fresh Cilantro-use to taste

1 Can of drained black beans

1 Can of drained yellow corn or fresh roasted corn

Juice of 1 lime

Diced Serrano pepper-optional or use to taste

2 or 3 Minced garlic cloves

Sea salt and fresh ground pepper

Ground Cumin-a teaspoon or to taste

Extra Virgin Olive Oil  or make Citrus-infused olive oil. Here is the recipe Citrus-infused olive oil.

Instructions:

Put the black beans, corn, tomato, mango, red onion, garlic, and Serrano pepper in a bowl and blend together. Season with salt, black pepper, lime juice, and cumin. Add chopped cilantro to the mixture and drizzle olive oil over the salad. Combine everything together and place in the refrigerator for about a half hour or eat at room temperature.

There’s a number of ways to serve this salsa. You can put it on a bed of brown rice, couscous, quinoa or dig in with tortilla chips. If you have leftovers, grill up some cod or tilapia filets and pair it with the mango and black bean salsa.
